Veggie Packed Turkey Sloppy Joes


In our home, I like to try to pack a healthier punch to many of our meals. This Sloppy Joe used lots of veggies and ground turkey to add a nutritious punch to our family dinner. I use carrot, celery, onion, green pepper, garlic and tomatoes for veggies and the sauce overpowers the veggies if you have picky eaters. My toddler and my (formerly) picky preteen didn't have any complaints. If your kids are picky even if they see the veggies, just blend them up in a high power blender or food processor and they will blend into the sauce without your kid being the wiser!





Start out by sautéing your hard veggies in a pan of EVOO. This will soften the onion, celery, peppers and carrots. Add your garlic in the last 30 seconds of cooking. Garlic burns quickly and will lose its yummy flavor if you sauté it for too long. Next, add your ground turkey and season with salt and pepper. Cook until brown. Add your seasonings that will give it that smokey flavor- cumin, paprika, and chili powder. Since the liquid in the bottom of the pan is mostly water from the turkey, I don't drain it.





Lastly, for your sauce, combine beef stock (this will give it that ground beef flavor with a fraction of the calories) ketchup, spicy bbq sauce, mustard, worcestershire sauce, tomato paste, and brown sugar in a bowl. Mix well and dump into the meat & veggie mixture. Continue to cook over a medium-low temperature for about 15 minutes or so, giving the sauce time to thicken.


We like to serve ours up on a whole wheat hamburger bun with a side of french fries.... come on- SOMETHING had to be a little bit of a splurge!



Veggie Packed Turkey Sloppy Joes


Ingredients

  • 1 tbsp Extra Virgin Olive Oil

  • 1lb ground turkey

  • 1 small onion, diced

  • 1/2 green bell pepper, diced

  • 1 medium carrot, shredded

  • 1 celery stalk, diced

  • 3 cloves garlic, finely diced

  • salt & pepper to taste

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp chili powder

  • 1 cup beef stock

  • 1 tbsp worcestershire

  • 3/4 cup ketchup

  • 1/4 cup spicy bbq sauce

  • 1 tsp yellow mustard

  • 1 tbsp brown sugar

  • 1 tbsp tomato sauce

In a large pan over medium high heat sauté onion, bell pepper, and celery in a pan. Squeeze any residual water out from shredded carrot and add to pan. Sauté for about 5 min or until onion becomes translucent. Add garlic and cook for 30 seconds. Add ground turkey to pan and salt and pepper generously. Cook until turkey is brown. Add cumin, paprika, and chili powder. In a medium size bowl combine beef stock, worcestershire, ketchup, spicy bbq sauce, mustard, brown sugar and tomato sauce. Whisk to combine and add to meat mixture. Lower heat to medium low and cook down for about 15 minutes or until sauce has thickened to your liking. Serve up on a whole wheat bun and enjoy!
