Quick & Easy Roasted Broccoli


Roasted broccoli is one of my favorite quick sides to make for any meal. It is so yummy and takes minimal work. Roasting the broccoli gives it a slightly nutty flavor and keeps great texture (as opposed to steaming) and best of all my whole family loves it.


I start out by preheating my oven to 375. I line a baking sheet with aluminum foil for easy cleanup (Yay! No pan to clean!). Cut up fresh broccoli into large bite size pieces, OR you can take another shortcut like myself and just buy a bag of precut broccoli. I buy a large bag at Costco since we go through a lot of it.


Next you will spread your broccoli out on the sheet pan. Drizzle with olive oil and add your seasonings. Give it all a nice toss with your hands and then spread it out in an even layer on your pan. You don't want to overlap because this will steam instead of roast your broccoli and you won't get those nice brown parts that make it extra yummy.


Roast in the oven for about 20 min. I like to use this hands off time to work on whatever our main course is for dinner! I only do 20 minutes because I like my veggies to still be a little crunchy. If you like yours more done you can always leave it longer.


And that's it! So easy and yummy!



Roasted Broccoli


Ingredients:

  • Broccoli

  • Extra Virgin Olive Oil

  • Johnny's seasoning salt (or Lawry's if Johnny's isn't available in your area)

  • Garlic powder

  • Pepper

Preheat oven to 375. Line a baking sheet with aluminum foil. Cut broccoli into large bite size piece and place on baking sheet. Drizzle with EVOO. Sprinkle seasoning salt, garlic powder and pepper over broccoli. Toss with hands to combine. All the broccoli should have the oil and seasoning on it. If it doesn't, add a little more and give it a quick little toss again.


Roast in oven for 20 minutes or until desired texture is achieved and you see some light browning. Serve immediately.
