Blackened Cod with Mango Avocado Salsa

I am a fan of sweet/spicy/savory foods paired with freshness. This blackened cod came together in less than 30 minutes and was delicious!

I started with two prepackaged pieces of frozen cod from Costco (assume all the things come from Costco in my home) and thawed them out overnight in the fridge overnight.

When it was time for dinner all I did was take the fish out and pat it dry with paper towels and then salt and pepper both sides.

Next I whipped up the sauce which consisted of honey, lime juice, garlic powder, a little olive oil and of course on of my favorite condiments- Sriracha.

Then I put the fish in to marinate while I made the salsa. You don't want to leave the fish in the marinade for a long time because of the lime juice. It can have a cooking affect on the fish.

For the salsa you will combine diced mango, avocado, finely diced red onion, garlic, and cilantro. Squeeze half a lime over it and salt it.

Next cook your fish for about 2-4 minutes (depending on thickness) on each side in a pan on medium heat. I had two very different thicknesses so I just removed the thin one from the pan while the thicker one cooked for a longer period of time. Keep a close eye on it as fish cooks quickly because if it overcooks you will have dry fish. The honey will give it that nice blackened crust that is so yummy!

When your fish is done serve and top with your salsa. I made roasted broccoli as a side and it was sooooooo good and good for you! Enjoy!

Blackened Cod with Mango Avocado Salsa

  • 2 5-6oz pieces of cod

  • 1 mango

  • 1/2 avocado

  • small palm full of chopped cilantro

  • 1 lime

  • 1 tbsp finely diced red onion

  • 1 small garlic clove

  • 1 tbsp honey

  • 1 tsp Sriracha

  • 1 tsp olive oil

  • 1/2 tsp garlic powder

  • salt & pepper

Pat pieces of cod dry. Salt and pepper on both sides. Combine honey, Sriracha, olive oil, garlic powder, juice from half a lime and salt in a medium sized bowl. Allow the fish to sit in the marinade while you work on your salsa, turning it over a few times so that the marinade coats the entire cod.

Combine diced mango, avocado, cilantro, red onion, garlic, and the juice from the other half of the lime. Add salt to taste. Set aside.

Bring a pan to medium heat and add the cod. Cook for 2-4 minutes on each side depending on thickness until outside has a brown/black crust and fish is just beginning to flake. Remove from pan. Serve topped with mango avocado salsa.
